People with an unlabeled sexuality choose to not label their sexuality at all. They could do it because they don’t feel like they fit in into a certain sexuality, don’t feel like they fit into any label ( such as lesbian, gay, bisexual etc.), they don’t know their sexuality yet, or as a rejection of the concept of labels as a whole.

Not labeling themselves does not exclude them from the LGBTQ+ community.
